Sweet potatoes can also be attacked by the black spot bacterium, and once attacked, they will develop spots. Sweet potatoes with dark spots will have toxic substances such as sweet potato ketones and sweet potato ketoneols, and if you eat this moldy sweet potato, the symptoms of poisoning can appear within a few hours after eating. The main manifestations are: stomach upset, nausea, vomiting, abdominal pain and diarrhea. In severe cases, symptoms such as high fever, headache, asthma, convulsions, and coma may occur.


Sometimes the baked sweet potatoes we see at the stalls, there are brown slimy things on the surface, don't worry too much, this may be the result of the caramel reaction, because the sweet potato itself has a high sugar content, it is easy to be concentrated at high temperatures, and the caramelization reaction occurs when heated to more than 140 degrees Celsius, and as the temperature rises, the color gradually darkens, and finally blackens and carbonizes, but non-toxic.


How to store sweet potatoes


Step 1: Usually, fresh sweet potatoes have wet soil on the surface, direct storage will accelerate decay, we can put them on the balcony for the first time to dry, the soil on the surface of the sweet potatoes dried before storage.


Step 2: Take out the large box that is idle at home, pick out the sweet potatoes with disease and insect bites and eat them in advance, first spread a layer of newspaper on the bottom, and put the good sweet potatoes neatly into it. Fill a layer, then spread a tissue or newspaper, and then a layer of sweet potatoes until it is full. Don't underestimate these newspapers or paper towels, which absorb moisture and keep sweet potatoes dry.


Step 3: Put the sweet potato in a ventilated and dry place, the temperature is preferably about 15 degrees, if the temperature is lower than 5 degrees, the sweet potato will frostbite to form a hard core, affecting the taste. If the temperature is higher than 28 degrees, sweet potatoes are prone to germination and rot under high temperature conditions. It is best not to wash sweet potatoes before eating, which will shorten the storage life of sweet potatoes.
